How are sheep slaughtered in goat slaughterhouse?

 Many people are interested in how sheep are slaughtered in slaughterhouses. The slaughtering process of pigs, cattle and sheep is very similar, except that sheep will have different processes of sheep dehairing and sheep skined in the slaughtering process. It should be noted that different processes require different sheep slaughter equipment. This process applies to all sheep slaughterhouses, including goat slaughterhouses.

In order to ensure the quality of mutton, sheep need to rest for 24 hours after entering the slaughtering pen to recover the fear and fatigue caused by transportation. During the process, suspicious sick sheep are found to be isolated and observed separately.

There are two ways: horizontal bleed and inverted bleed.

Horizontal bloodletting: The live goat sheep are transported to the slaughtering workshop with a V-shaped conveyor, and the sheep are stunned by hand anesthesia during the conveying process on the conveyor, and then stabbed with a knife on the bloodletting table for bloodletting.
Inverted bloodletting: The live sheep is tied to a hind leg with a bloodletting sling, and the wool sheep is lifted into the track of the sheep bloodletting conveyor line by the elevator or the lifting device of the sheep bloodletting line, and then bloodletting. . Bleeding time is about 5 minutes.

The bloodletting line includes manual bloodletting line and automatic bloodletting line.
The manual bloodletting line is pushed forward manually. More labor and low price.
The automatic bloodletting line is driven by the machine, with less labor, high degree of automation and high price.

Pre-peeling is divided into upside-down pre-peeling and balanced pre-peeling
Upside down pre-peeling: Use a sheep fork to spread the two hind legs of the sheep, so as to pre-peel the front legs, hind legs and breasts.
Balanced pre-peeling: The two automatic conveyor lines hook the lamb legs with hooks respectively, and peel the lamb carcass during the synchronous forward process. In this way, the contamination of the carcass with wool can be reduced.


Sheepskin Removal

The sheepskin is clamped by the leather clipping device of the sheep skin pulling machine, and the whole sheepskin is pulled from the back leg of the sheep to the front leg.
The sheepskin is transported to the sheepskin temporary storage room through the sheepskin conveyor or the sheepskin air delivery system.

After the blood has been drained, the sheep are unloaded into the scalding pool for scalding through the automatic decoupling device. The temperature of the hot pool is about 65 degrees, and the time is about 5 minutes. During the scalding process, the sheep needs to be tumbled continuously for even scalding.

The scalded sheep carcass is depilated by a dehairing machine, and the depilation rate must be higher than 96%.

Sheep carcass processing station: open chest, take white viscera, take red viscera, carcass inspection, carcass trimming, etc.
The removed red and white internal organs need to be placed on the quarantine conveyor for quarantine.

(1) The sheep carcass, white viscera and red viscera are transported to the inspection area for sampling and inspection through the synchronous sanitary inspection line.
(2) Suspicious diseased carcasses that fail the inspection, enter the suspicious diseased carcass track through the turnout, conduct re-inspection, confirm that the diseased carcass enters the diseased body track line, remove the diseased carcass, put it in a closed car, and pull it out of the slaughter workshop for processing .
(3) The unqualified white viscera are taken out from the tray of the synchronous sanitary inspection line, put into a closed car and pulled out of the slaughtering workshop for processing.
(4) The unqualified red viscera should be removed from the hook of the synchronous sanitary inspection line, put into a closed car and pulled out of the slaughtering workshop for processing.
(5) The red viscera hooks and white viscera trays on the synchronous sanitary inspection line are automatically cleaned and sterilized by cold-hot-cold water.

Qualified red and white viscera are cleaned in the viscera processing room, and then packed into a cold storage or fresh-keeping storage.

(1) Put the trimmed and rinsed lamb carcass into the acid-exhausting room for “acid-exhausting”, which is an important part of the cold-cutting process of mutton.
(2) The temperature of the acid discharge room: 0-4℃, and the acid discharge time should not exceed 16 hours.
(3) The height of the acid discharge track is designed to be no less than 2200mm from the floor of the acid discharge room, the track spacing: 600-800mm, and 5-8 sheep carcasses can be hung per meter of the track in the acid discharge room.

(1) Hanging and deboning: push the sheep carcass after acid removal to the deboning area, and hang the lamb carcass on the production line. The deboning personnel put the cut large pieces of meat on the segmentation conveyor, and automatically transfer it to the segmentation personnel. There are division staff to divide the meat into various parts.
(2) Deboning on the chopping board: Push the sheep carcass after acid removal to the deboning area, take the lamb carcass off the production line and place it on the chopping board for deboning.
(3) After the cut meat is vacuum-packed, put it in the freezing tray and push it to the freezing warehouse (-30℃) for freezing or to the finished product cooling room (0-4℃) to keep it fresh.
(4) Pack the frozen products into trays and store them in the refrigerator (-18℃).
(5) Temperature control between deboning and segmentation: 10-15℃, temperature control between packaging: below 10℃.
